TOMATO BASIL PIE
| 1 prepared pie crust |
3 or 4 medium tomatoes, sliced fairlr thick |
| 2 Tablespoons fresh basil, chopped |
1 cup mozzarella cheese, grated |
| 1 Tablespoon grated parmesan cheese |
1 cup sharp Cheddar cheese, grated |
| 1 cup mayonaise |
1/2 teaspoon red pepper |
Brush bottom of pie crust lightly with butter and sprinkle with parmesan
cheese. Bake at 400 degrees for 5 minutes. Remove from oven and
place tomato slices in bottom of crust; sprinkle with basil. Mix cheese,
mayonnaise and pepper. Pat on top of tomato-basil. Bake in 400
degree oven for 15 to 20 minutes. Serve warm.
