French Onion Soup 

5 c. sliced sweet onions 1 Tab. butter
3/4 Tab. low-sodium soy sauce  3 Tab. dry sherry
6 c. low-sodium beef broth 1 Tab. flour
Pepper to taste Toasted French bread, cubed
1/2 c. Asiago cheese

Saute' onions in a saucepan until brown.  Add the butter; when melted add the sherry and stir in the flour until blended. Slowly add 1 cup of broth and stir until thickened.  Add remaining broth, soy sauce and pepper.  Put a few cubes of the toasted bread in the bottom of the bowls.  Add soup and sprinkle with the cheese.   by Don Roman
