Onion Soup
| 5 c. sliced sweet onions |
1 Tab. butter |
| 3/4
Tab. low-sodium soy sauce |
3 Tab. dry sherry |
| 6 c. low-sodium beef broth |
1 Tab. flour |
| Pepper
to taste |
Toasted
French bread, cubed |

1/2 c. Asiago cheese |
|
Saute' onions in a saucepan until brown. Add
the butter; when melted add the sherry and stir in the flour until blended.
Slowly add 1 cup of broth and stir until thickened. Add remaining broth,
soy sauce and pepper. Put a few cubes of the toasted bread in the bottom
of the bowls. Add soup and sprinkle with the cheese.
