Flan

Caramel Sauce  

Brown in a skillet 1/2 to 1 cup sugar and 1 tbsp water, do not overcook. Immediately spoon caramel into bottom of ramekins as it will harden quickly! So hurry!

Baked Custard
1 pint milk		1/3 cup sugar
2 whole eggs	1/2 tsp Vanilla
pinch salt 
 
Beat eggs thoroughly, add sugar, beat once more. Pour cold milk over egg mixture.   Wet ramekins and do not dry.
 Add pat butter to each. Place ramekins into large shallow pan and bring water 1/2 way up ramekins. 
 
 Fill with custard mixture and bake in slow oven approx 45 mins. to 1 hour. Done when knife comes out clean.

 Caramel out of the bottom!
