French Toast Foster-Webb

SAUCE:

2 TBS butter

1 cup brown sugar

1/4 cup rum

6 bananas sliced thin

1 TBS lemon juice

1/8 tsp cinnamon

3 TBS banana extract

 

Heat butter and lemon juice in 2 quart saucepan until bubbly. Add brown sugar and cook about 5 minutes, stirring constantly over medium heat until sugar dissolves and the mixture thickens. Stir in cinnamon, rum, and banana extract, then remove immediately from heat. Ignite and allow to burn until flames dies down. Stir in bananas and keep warm on very low heat until french toast is done.

BATTER:

4 eggs

1/4 cup sugar

1 cup milk

1/2 tsp vanilla

dash of nutmeg

1 loaf french bread sliced

Beat eggs in a separate bowl. Add milk, sugar, vanilla and nutmet stirring well to blend. Soak slices of bread and fry about 3 minutes each side. Remove individual portions from pan, top with sauce and serve

 Butter and oil for frying
